Wine
Provenance Geelong Shiraz is grown on a gentle north-east slope of the Moorabool Valley in Geelong, where the soils are red sandy loams over ironstone gravels.
A portion of the fruit is left as whole bunches while the remainder is destemmed. It undergoes open fermentation with wild yeasts, receiving hand plunging.
Most of the wine sees natural malolactic fermentation and maturation in seasoned French oak. Around one quarter instead matures in concrete eggs. After 12 months the wine is racked for bottling.
Deep violet, Provenance Geelong Shiraz has powerful fruit flavours cut with fine textural tannins and fresh natural acidity. Cellaring potential is 10 years.
